Three years after shutting down the kitchens of his incredible Café Sillon (winner of Le Fooding’s Best Bistro of 2015 award), Lyonnais chef Matthieu Rostaing-Tayard has finally opened up a new spot in the center of his favorite city. Welcome to Micro Sillon, a wine shop decked out with rough stone walls and white tiling, where everything you eat and drink is memorable! With his ever-faithful partner Joanna Figuet taking care of the wines, the duo unearths some impressive bottles and sends out explosively flavorful snacks, all of which are carefully sourced. For us, the night we went, seated under the string lights on the terrace: a plump country terrine and smoked pork-beef sausages from the Tête Bech butcher’s shop; delightful Alubión coco de Paimpol beans sprinkled with pimentón de la Vera and a citrus salt; mackerel crudo enhanced with the “world’s best capers,” fennel, aniseed and a crispy Sardinian bread; a striking veal tartare with grated tuna, toasted hazelnuts and a bay leaf oil; before a comforting white chocolate mousse with buckwheat seeds and raspberries. And for stinky cheese lovers, there’s plenty of good things to choose from: a Picodon from the Ferme du Puy, a farm-fresh Laguiole, a goat’s cheese from Les Aravis… The space might be small, but big memories are guaranteed! // Mado Réassouet

FEELING THIRSTY? A well-balanced wine list: a Bourgueil red from the Domaine de la Chevalerie (€7 a glass), a Loire pet’ nat’ from Noëlla Morantin (€8), a Mâcon-Villages from Les Vignes du Maynes (€38 a bottle).

PRICE: Plates €3-15, cheeses €5-8, desserts €7.
