Order up in the Levant! After working in the kitchens of Miznon and Souk, the French-Israeli chef Or Bitan is currently rocking the casbah at Dalia. With its pink stone ceiling, powder pink walls and rattan chairs, this spot sure sends a warm breeze blowing through Paris! Served à la carte the night we went, there was a selection of small plates with a Middle Eastern twist: exquisite artichokes and stracciatella with a parsley, mint, walnut and pistachio pesto for a pop of flavor; incredibly fresh wild meagre sashimi with Greek yogurt, fennel, lemon zest and Kalamata olives; the creamiest hummus you can imagine with grilled chicken heart and liver, all served with homemade bread – a delight! And for anyone with a big appetite, there’s a divine lamb shoulder slow-cooked for seven hours, served with freekeh tabbouleh and a gigantic shakshuka with runny eggs, plus a silky malabi (panna cotta) to end the meal on a sweet note. // Elisabeth Cachou

A cocktail menu that revisits the classics (an orange blossom spritz, an aquafaba Pink Sour… €10-12) and bottles sourced from across France: a Roussillon red from Le Clos des Vins d’Amour (€6 a glass), an Aude red from Les Hautes Terres (€29 a bottle), a Jura white from the Domaine des Marnes Blanches (€48)…
